Ingredients:
- Corn tortillas (4)
- 16 oz white beans
- Guacamole (to serve)
- Cilantro (to serve)
- Shredded purple cabbage
- 16 oz corn
- White rice (cook this first if on stove top because it takes about 30 min)
- Bell pepper (1)
- 3 cloves garlic
- ½ white onion
- 2 tbsp olive oil
- 2 tsp garlic salt
- 2 tsp paprika
- 1 tbsp chili powder
- 2 tbsp taco seasoning
- 2 tsp lime juice

Instructions:
- Chop onion and garlic and add to the pan over medium heat along with the olive oil. Saute until onions are translucent and garlic is fragrant
- Chop bell pepper and add to the pan along with the white beans, corn, and shredded purple cabbage. Saute for 3 minutes.
- Add rice to the pan and saute for another minute.
- Add garlic salt, paprika, chili powder, taco seasoning, and lime juice and give a quick stir.
- In another pan, add tortillas on low heat until they are warmed up
